Silky smooth, sweet and tart lime and ginger sorbet.
In a medium saucepan, bring to a boil the water, sugar, corn syrup. Stir in the lime zest and ginger. Set aside and let steep for 20-30 minutes.
Juice about 7 large limes to make 1 1/4 cup of lime juice. Set aside.
Strain the ginger syrup through a fine sieve. Mix the lime juice with the syrup.
Turn on your ice cream maker and slowly stream in the lime and ginger mixture. Let the machine do it's thing for about 20 minutes. You'll notice the sorbet start to form.
Transfer the lime and ginger sorbet to an ice cream tub and refrigerate for a couple hours to help it firm up.
