Swiss Meringue

Fluffy, delicious Swiss Meringue

  • 6 large egg whites
  • 1 1/2 cup granulated sugar
  • 1/4 tsp cream of tartar


  1. Fill a saucepan with a little more than 1 inch of water and bring to a boil and then lower to a simmer.

  2. In a heat safe bowl of the bowl of a stand mixer, add the egg whites and sugar. Whisk to combine.

  3. Place the bowl over the saucepan, making sure the bowl does not touch the water. Whisk for about 5-7 minutes until the mixture is hot to the touch and the sugar granules have dissolved.

  4. Transfer the mixture to a stand mixer and whisk on high for 6-8 minutes until the fluffy and glossy. whisk in the cream of tartar.
