These chocolate zucchini brownies are super easy to make, they are chocolatey, moist and cake-y. Topped with a delicious cream cheese frosting.
Preheat oven to 350*F. Line a 8x8 square pan with parchment paper.
Using a grater, grate the zucchini. For 2 cups, you'll just need one large zucchini.
In a large bowl, sift together the flour, cocoa powder, baking soda and salt.
In medium bowl, whisk together the eggs, sugar, apple sauce and vanilla.
Add the wet ingredients into the dry ingredients and whisk them together until just combined. Stir in the grated zucchini and the chocolate chunks.
Transfer the mixture to the square pan, smooth out the top. Bake in the oven for 30-33 minutes, test the doneness of the brownies with a toothpick. I like my brownies a little more on the gooey side so I like to take them out when the toothpick is almost clean.
Cool of a wire rack for 10 minutes. Then take it out of the pan and cool completely before icing.
Whisk together the cream cheese and butter until light and fluffy. Sift in the icing sugar and vanilla. Whisk on high for 2-3 minutes until light and fluffy.
