This sweet potato, carrot and bacon hash is hearty, delicious and will keep you full all morning.
Bring a small pot of water to a boil. Add the sweet potato and boil until almost tender.
In a skillet on medium high heat, fry the bacon until crisp. Remove the bacon from the skillet, leave the bacon fat.
Add the onion, diced carrots and sauté until the onions are translucent and at the carrots are tender. Add the sweet potato, garlic, jalopeño, paprika salt and pepper.
Add the bacon back into the hash and sauté to warm through.
Fry up 2 eggs and serve on top of hash. Enjoy!
