Delicious light, airy and cakey Pumpkin Spice Donuts. They are spiced with my Pumpkin Spice Mix, rolled in a simple cinnamon sugar and simply to die for!
Preheat oven to 400F. Spray two donut pans with non stick spray or brush with oil or melted butter.
In a large bowl, add the flour, sugar, baking powder, baking soda, pumpkin spice and salt. Whisk to break up any clumps.
Measure out the milk, greek yogurt and pumpkin puree. Mix in the eggs and melted butter.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Spoon the batter into a pastry bag and pipe the batter into the moulds. Fill about 3/4 full. Bake in the oven for about 8-10 minutes until golden brown and a toothpick comes out clean.
Let the donuts cool in the pans for about 3-5 minutes. Tap the pans upside down on a wire rack to remove the donuts.
Combine the granulated sugar and cinnamon to create the cinnamon sugar. Brush the tops of the donuts with either melted butter or melted coconut oil and toss the donuts in the cinnamon sugar.
