27 Aug HOW TO MAKE STRAWBERRY CHEESECAKE POPS WITH SPLENDA® STEVIA SWEETENER
If you know me, you know that I have the biggest sweet tooth ever, I will never turn down a croissant, chocolate and especially ice cream.
I know, it’s pretty awful when you’re trying to behave and eat healthier and you walk by a delicious bakery and see cakes and cookies in the window or you’re just scrolling through your Instagram feed and it’s full of photos of drool-worthy ice-creams and donuts and your stomach starts growling and you just can’t help yourself. So when I discovered that the SPLENDA® Brand has a stevia sweetener that tastes great AND has no-calories I knew I had to try my hand at creating something delicious with it. I mean, really? I can satisfy my sweet tooth without feeling guilty? I’m in!
Even with the summer winding down, it’s still pretty hot out there and I can only think of one delicious way to cool down! With lots of ice cream. I’m such a sucker for all ice cream; whether it’s ice cream in a cup, soft serve in a cone, a snow cone or an ice pop. I made these super easy, strawberry cheesecake pops with a graham cracker crumble that will satisfy any sweet tooth! They literally take 10 minutes to prep and you pop them into the freezer, stick a wooden pop stick in them, and after a few hours you are in cheesecake heaven!
I bake with a lot of strawberries because I love the natural taste and freshness that they bring to any dessert. I added a bit of the SPLENDA® Stevia Sweetener to the pops to enhance the sweetness of the strawberries. The Greek yogurt is a great base for the ice cream because it’s thick and creamy and the graham cracker crumble adds a little texture too – that’s my favourite part!
What’s so great about new SPLENDA® Stevia Sweetener? The sweeteners are derived from the stevia plant. They are calorie-free, non-GMO and tastes great with no bitter aftertaste. It also has no added flavours or added colours. One packet of the SPLENDA® Stevia Sweetener is equivalent to the sweetness of 2 teaspoons of sugar.
You can use SPLENDA® Stevia Sweetener almost anywhere you would use sugar, it’s a great sugar substitute as it doesn’t affect the taste, colour or consistency of what you’re making.
Strawberry Cheesecake Pops Sweetened with Splenda® Stevia Sweetener
Yields 8 Pop Sticks
Graham Cracker Crumble
2 packets SPLENDA® Stevia Sweetener
2 Tbsp unsalted butter, melted
5 Tbsp graham cracker crumbs
Preheat oven to 350°F (177° C). Line a baking tray with parchment paper.
In a small, microwaveable bowl, melt the butter in the microwave. Add the graham cracker crumbs and the SPLENDA® Stevia Sweetener and mix with a fork until the mixture comes together and feels like wet sand.
Pour the crumbs onto the baking sheet and pat the crumbs into a thin layer.
Bake in the preheated oven for 8 minutes, or until golden brown. Remove from the oven and let cool completely before crumbling the crust apart.
3/4 pint strawberries, hulled and quartered
1 1/2 packets SPLENDA® Stevia Sweetener
In a food processor, purée the strawberries until smooth. Add the SPLENDA® Stevia Sweetener and blend to combine. Set aside.
ICE CREAM BASE
2 cups plain, Greek yogurt
1/2 cup cream cheese, softened
1 tsp vanilla extract
In a medium-sized bowl, add the yogurt, SPLENDA® Stevia Sweetener packets, cream cheese, and vanilla. Whisk until creamy and well mixed.
1 cup fresh strawberries, diced
Divide half of the strawberry puree and Greek yogurt mix into eight pop moulds. Next add the fresh, diced strawberries and graham cracker crumbs; followed by the other half of the strawberry puree and yogurt. Once you fill the moulds, place them in the freezer, and after about an hour or so, stick the wood pop sticks into each mould.
Note: There’s no real rules with making your pops. You can add other fruits, shredded coconut, caramel, pretty much anything.
