Ingredients
For rolling the brownie bites
Instructions
  1. In a medium bowl, add the pitted dates and the boiling water. Set aside for 5 minutes. This will help to soften the dates so you can easily puree them.
  2. In a large bowl, add the almond flour, cocoa powder, flax seed, pecans, coconut flakes and salt. Stir to combine.
  3. Strain the dates from the water and place in a blender or food processor. Add the coconut oil and maple syrup and puree until smooth. Then add the vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir to combine.
  5. Line a baking tray with parchment paper. With a small cookie scoop or using a tablespoon, scoop the mixture into 1 inch balls. Roll them with your hands if you’re like me and prefer perfect round balls.
  6. Place the 1/4 cup cocoa powder and 1/4 cup coconut flakes in two separate bowls. Roll the brownie balls in either bowls to coat.
  7. Place the tray in the fridge for at least 20-30 minutes to set. And enjoy!
  8. Store the brownie bites in an airtight container in the fridge.
