24 Jul VEGAN, GLUTEN-FREE BROWNIE BITES
After coming back from Italy about 3 weeks ago, Taylor and I decided we were going to eat healthy for a while. While we still have a cheat day once a week and I relapse every now and then (haha) I’ve been trying to find healthier ways to get my sugar fix. I’ve been eating lots of fruit to satisfy my sweet tooth but seriously nothing can replace my love for all things chocolate!
Enter, these vegan, gluten-free, refined sugar-free but delicious brownie bites.. it kinda has a ring to it? Bahaha. When I first made these, I literally raided my pantry to see what sugar-free and gluten-free ingredients I had, threw it all together and prayed it would work and luckily it did! Win.
This recipe is super easy and you can switch out the pecans for other nuts or the maple syrup for a different sweetener. You can also add nut butter in place of the coconut oil, literally whatever you want. This is an almond flour based recipe, slightly sweetened with dates and maple syrup, cocoa powder for my chocolate fix, flax seed because everyone needs more fibre in their lives and coconut because… it’s coconut.
