VEGAN, GLUTEN-FREE BROWNIE BITES

After coming back from Italy about 3 weeks ago, Taylor and I decided we were going to eat healthy for a while. While we still have a cheat day once a week and I relapse every now and then (haha) I’ve been trying to find healthier ways to get my sugar fix. I’ve been eating lots of fruit to satisfy my sweet tooth but seriously nothing can replace my love for all things chocolate!

 

 

Enter, these vegan, gluten-free, refined sugar-free but delicious brownie bites.. it kinda has a ring to it? Bahaha. When I first made these, I literally raided my pantry to see what sugar-free and gluten-free ingredients I had, threw it all together and prayed it would work and luckily it did! Win.

 

 

This recipe is super easy and you can switch out the pecans for other nuts or the maple syrup for a different sweetener. You can also add nut butter in place of the coconut oil, literally whatever you want. This is an almond flour based recipe, slightly sweetened with dates and maple syrup, cocoa powder for my chocolate fix, flax seed because everyone needs more fibre in their lives and coconut because… it’s coconut.

These brownie bites are super easy to prepare and will satisfy any chocolate cravings you have! And the best part, they are vegan, gluten-free and refined sugar-free!

Instructions
  1. In a medium bowl, add the pitted dates and the boiling water. Set aside for 5 minutes. This will help to soften the dates so you can easily puree them.
  2. In a large bowl, add the almond flour, cocoa powder, flax seed, pecans, coconut flakes and salt. Stir to combine.
  3. Strain the dates from the water and place in a blender or food processor. Add the coconut oil and maple syrup and puree until smooth. Then add the vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir to combine.
  5. Line a baking tray with parchment paper. With a small cookie scoop or using a tablespoon, scoop the mixture into 1 inch balls. Roll them with your hands if you're like me and prefer perfect round balls.
  6. Place the 1/4 cup cocoa powder and 1/4 cup coconut flakes in two separate bowls. Roll the brownie balls in either bowls to coat.
  7. Place the tray in the fridge for at least 20-30 minutes to set. And enjoy!
  8. Store the brownie bites in an airtight container in the fridge.
