When you’re sad that peach season is quickly approaching and haven’t gotten your peach fix in, make the easiest skillet peach crumble! I’ve always loved peaches, fresh peaches, canned peaches, peach jam, you name it! Taylor’s Aunt Maria actually makes the BEST peach pie I have ever had.. like ever. Mind you, she lives in Kelowna where they have the best peaches (in my opinion). The peaches are juicy, ripe and sweet, it’s hard not to eat a whole bushel of them. I’ve been bugging her for the recipe.. hopefully, fingers crossed she’ll give in one day.

Here is my quick skillet peach crumble recipe to make TONIGHT!! It’s a super simple recipe, I sliced the peaches and toss them in a cornstarch mixture that’s seasoned with cinnamon and vanilla. I also added balsamic glaze to add a bit of tanginess to the peaches, you can absolutely omit it if you think it’s a little strange but I promise you, it’s strangely delicious! For the crumble, I mixed in a bit of shredded coconut because if you know me, I love adding coconut to almost anything and everything!

 

I hope you enjoy this super easy skillet peach crumble recipe! Feel free to add nuts to the crust, top the warm crumble with ice cream and if you’re really feeling indulgent, caramel is always a great idea.

Instructions
  1. Preheat the oven to 375°F.
  2. In a large bowl, add the sliced peaches, caster sugar, corn starch, vanilla, cinnamon and salt. Toss to coat the peaches. Set aside.
  3. In another large bowl, combine the flour, oats, coconut, muscavado sugar and salt. Add the cold butter and work the butter into the mixture with your fingers. Rub the butter into the mixture to form clumps. Set aside.
  4. On medium, melt the butter in the cast iron skillet until it starts to bubble. Turn off the heat and add the peaches and balsamic glaze. Toss the peaches to coat with butter and balsamic.
  5. Sprinkle the crumble evenly over the peaches, no need to press the crumble down. Bake in the oven for 25-30 minutes until the peaches start bubbling and the crumble is nice and golden brown.
  6. Serve warm with whipped cream or ice cream!
Recipe Notes

The cast iron skillet I used is a the Lodge Cast Iron 8 inch skillet. If you don't have one, no worries! Just a baking pan and melt the butter either on the stove or in the microwave and follow the instructions as usual.

This recipe is super versatile, if peaches are not in season, use other fruit like plums, nectarines and even pears!
