26 Oct 7 DAYS OF PUMPKIN: HOW TO MAKE PUMPKIN SPICED DONUTS
Pumpkin Spiced Donuts .. because donuts make everything better. Somehow anything in donut form just tastes so much better. These donuts are baked so they’re soft, cakey and pillowy. I’ve definitely had my fair share of donuts so I would tell you if these weren’t good.. but they really are and you’ll definitely need to try it out.
Ever since I picked up my donut pans, I’ve been trying out all different kinds of donut recipes because if you can, why wouldn’t you make it into a donut?! Kristie from the Sweet and Simple Kitchen also makes delicious donuts! I love love love her chocolate donut recipe. I picked up my donut pans from William Sonoma, I find they always have the best quality pans. They are a little pricier but I’ve had my cookie sheets and muffin tins for a while now and they are still in great shape, they don’t warp and they bake my goodies evenly. Definitely worth the investment!
This recipe is SO easy. Make them with your friends or kids. Mix your dry ingredients and your homemade Pumpkin Spice Mix together, then give it a little whisk to aerate it and break up any clumps. I used to find it difficult to measure out something weird like yogurt or a puree but it’s super easy and you don’t need to use a million measuring cups. So this recipe calls for:
¼ cup of milk
¼ cup of Greek yogurt
and 1 cup of pumpkin puree
Grab your measuring cup (at least a 2 cup to hold all the liquid), measure out the ¼ cup of milk. Next, slowly start to spoon Greek yogurt into the milk until the milk hits the ½ cup line. Easy right? Next, Scoop in the pumpkin puree until it hits the 1½ cup line. Crack in your eggs, beat them gently. Stir in the melted butter and you are set to add it to the dry mix. I’m all about using less dishes so, if you don’t already use this method, test it out and let me know if it makes your life any easier.
Okay, next, mix the batter until it just comes together, make sure not to over-mix. Transfer it into a pastry bag, pipe that delicious batter into the donut pans and in 8 short minutes, you have delicious and cute Pumpkin Spice Donuts. Let’s do this!
Pumpkin Spice Donuts
Delicious light, airy and cakey Pumpkin Spice Donuts. They are spiced with my Pumpkin Spice Mix, rolled in a simple cinnamon sugar and simply to die for!
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 2 tsp pumpkin spice see NOTES for recipe
- 1 tsp salt
- 1 cup pumpkin puree
- 1/4 cup milk I used whole milk
- 1/4 cup greek yogurt
- 2 eggs
- 2 tbsp unsalted butter melted and cooled
- 1/4 cup granulated sugar
- 1 tsp cinnamon
- 1/4 cup butter or coconut oil
Preheat oven to 400F. Spray two donut pans with non stick spray or brush with oil or melted butter.
In a large bowl, add the flour, sugar, baking powder, baking soda, pumpkin spice and salt. Whisk to break up any clumps.
Measure out the milk, greek yogurt and pumpkin puree. Mix in the eggs and melted butter.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Spoon the batter into a pastry bag and pipe the batter into the moulds. Fill about 3/4 full. Bake in the oven for about 8-10 minutes until golden brown and a toothpick comes out clean.
Let the donuts cool in the pans for about 3-5 minutes. Tap the pans upside down on a wire rack to remove the donuts.
Combine the granulated sugar and cinnamon to create the cinnamon sugar. Brush the tops of the donuts with either melted butter or melted coconut oil and toss the donuts in the cinnamon sugar.
