First things first, Pumpkin Spice Lattes. I know what some of you are going to say.. that I’m basic for making pumpkin spiced lattes. But you know what, to be honest, I’ve never had a PSL. However, I do love pumpkin so I can’t imagine what could be so “gross” or “disgusting” about a delicious and hot pumpkin pie flavoured drink? Challenge accepted.. to make a delicious pumpkin latte that will convert any PSL-hating being.
My friend, Hillory, and I spent the afternoon, mostly chatting and catching up, but we made this deliciously gooey pumpkin spice caramel for the Pumpkin Spice Latte. I met Hillory about a year ago, after chatting on Instagram for what seemed like forever. When I met her, I knew we would be life-long friends! The Pumpkin Spice Caramel takes about 15 minutes. Grab a medium saucepan to make the caramel, it’ll take about 8-10 minutes to get a golden amber colour, make sure to keep an eye on it so it doesn’t get too dark! Next, carefully toss in the softened butter and whisk until everything is incorporated. Stream in the cream, add the vanilla, salt, our Homemade Pumpkin Spice Mix and last but not least the pumpkin puree. This caramel smells and tastes just like pumpkin pie.
In a milk frother or on the stove, froth about one cup of milk for every 2 tablespoons of the caramel. We layered the lattes in clear glasses for photos but if you’re prepping it on the stove, mix the caramel right into the milk as you’re heating it up. Top off with a hefty dollop of whipped cream, a pinch of pumpkin spice mix, grab a friend and enjoy!
Homemade Pumpkin Spice Lattes
This homemade Pumpkin Spice Latte is super easy to make! Impress your friends at your next gathering with a warm cup of sweet and spicy Pumpkin Spice Lattes.
- 1 cup granulated sugar
- 1/4 cup water
- 4 tbsp butter softened
- 1/2 cup heavy cream room temperature
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 tsp pumpkin spice see NOTES for recipe
- 2/3 cup pumpkin puree
In a medium saucepan, on medium high heat, bring the sugar and water to a boil. Reduce the heat to about medium and continue cook until it's starts to turn a golden amber colour. Make sure not to stir the mixture.
Take the saucepan off the heat, add the butter and whisk carefully to combine.
Stream in the heavy cream and continue to whisk. Add the pumpkin puree and whisk until the mixture is nice and smooth. Finally, add the vanilla, pumpkin spice and salt.
Making the Latte
Warm up 1 cup of milk (per person), either on the stovetop, microwave or in a milk frother. Add about 2 tbsp of the Pumpkin Spice Sauce per cup. You can definitely add more if you like it sweeter and more pumpkin-y.
You can add the Pumpkin Spice Sauce directly in with the milk to flavour the milk as it heats up or if you want to present it beautifully with layers, add the Pumpkin Spice Sauce to the bottom of a clear glass and pour the milk in after. It'll create kind of an ombre effect.
Top your latte off with fresh whipped cream (super easy: 1 cup heavy cream + 2 tbsp icing sugar) and a pinch of pumpkin spice!
