This girl is currently on a cheese kick. I can’t help it.. with the weather being so crappy out, all I want to do is eat comfort food and curl under a blanket and watch Netflix all day. Cheese is one of my weaknesses.. this is why I don’t think I could ever go vegan. There’s something so satisfying about gooey, stringy cheese that I just can’t. This Phyllo Wrapped Baked Brie is one of my guilty pleasures,Taylor’s mom always makes this delicious treat for us, it’s perfect for a house full of people because.. I could literally eat this entire wheel of brie to myself!
This Phyllo Wrapped Baked Brie is flakey, buttery and deliciously cheesy. It’s super easy to make, does not require a lot of ingredients and perfect for your next get together! I paired the brie with a homemade Peach, Balsamic and Thyme compote that took me less than 10 minutes to make! You could also top it with your favourite jam, I love fig or apricot and even a sweet and spicy red pepper jelly!
My Grocery List:
- 1 wheel of brie (I used triple cream)
- 1 package of phyllo pastry
- Frozen peaches
- Fresh Thyme
- Balsamic Vinegar or Glaze
I whipped up this Peach, Balsamic and Thyme compote in less than ten minutes and it would be delicious as part of a cheese board as well! In a small saucepan, I mixed together the frozen peaches, sugar, lemon juice and thyme. I brought it to a boil and simmered it on mediumlow for about 5-7 minutes until the peaches were soft and easy to mash. Once the peaches are soft, turn off the heat and mix in the balsamic vinegar or glaze and remove the sprig of thyme. That. Is. It!
To wrap the brie, thaw the phyllo dough in the fridge for at least a couple hours. You’ll only need 4 sheets. Lay out the first sheet and brush it with melted butter. Layer another sheet on top and it again with melted butter. Repeat the steps until you have four layers.
Place the wheel of brie in the centre and top with that delicious Peach Balsamic and Thyme compote!
I trimmed my phyllo pastry into a square so that I could wrap it properly. Fold the corners over the brie and continue all around until you have a cute little bundle of cheese! Brush generously with melted butter so that it gets nice and golden brown!

Phyllo Wrapped Baked Brie
This Phyllo Wrapped Baked Brie is to die for! What could be better than warm, gooey cheese with a flakey, butter exterior? Serve this at your next dinner party!
- 1 wheel brie I used triple cream
- 1 package phyllo pastry
- 1/2 cup butter melted
Peach Balsamic and Thyme Compote
- 2 cups frozen peaches
- 1/4 cup sugar
- 2 tbsp lemon juice
- 2 tsp balsamic vinegar or glaze
- 2 sprigs of thyme
Peach Balsamic and Thyme Compote
In a small saucepan, add the frozen peaches, sugar lemon juice and thyme. Bring to a boil and simmer on medium-low for 5-7 minutes until the peaches are soft and easy to mash.
Take off the heat, remove the sprig of thyme and stir in the balsamic vinegar/glaze.
Phyllo Wrapped Brie
Preheat oven to 400F.
On a piece of parchment paper, lay out a single sheet of phyllo. Brush with melted butter. Layer another sheet of phyllo and brush again with butter.
Repeat the steps until you have 4 layers of phyllo.
Place the brie in the centre of the phyllo dough. I trimmed my sheets into a square so that I can easily wrap the brie.
Scoop about 1/3 cup of peach compote on top of the brie. Pull the corner of the phyllo pastry over the brie and continue folding over the dough until you have a neatly wrapped package of brie!
Brush the outside with melted butter. Bake on a cookie sheet in the oven for about 20-22 minutes until the outside is nice and golden brown.
Serve with toasted crostini or crackers and enjoy! Serve warm.
