I love the freshness of fruit ice creams but every time I’ve made fruit sorbets or ice creams, they always come out icy and difficult to scoop. This lime and ginger sorbet is the perfect treat to cool off weekend and even more delicious in a cocktail! It’s silky smooth, a touch on the tart side with a kick of spicy ginger!
My Grocery List:
- 7-8 large limes
- light corn syrup
- 1 large piece of ginger
- Ice cream maker
This Lime and Ginger Sorbet is made up of 4 simple ingredients and super easy to make, your ice cream maker does most of the work for you! Start with bringing all water and sugars to a boil in a saucepan. Add in your freshly grated lime zest and ginger and set it aside to let it steep for about 20 minutes. I grated the ginger with the skin on since we’re straining out all the little bits and pieces anyway! Easy peasy, lime squeezy!
I’ve had my little ice cream machine for a few years now and I absolutely love it! You can literally make any flavour ice cream or sorbet your heart desires!
That’s not all, add this Lime and Ginger Sorbet to your cocktails and make Lime and Ginger Margaritas OR even Moscow Mules!!
Lime and Ginger Margaritas
1 oz Tequila
½ oz Cointreau or Triple Sec
1 large scoop of Lime Ginger Sorbet
top with Soda water
Rim half your glass with salt. Then add your Lime Ginger sorbet, pour the Tequila and Triple sec over the sorbet to chill with liquor. Top with soda water for some bubbles and Enjoy!
Lime and Ginger Moscow Mules
1 ½ oz Vodka
2 large scoops of Lime Ginger Sorbet
top with Soda water
In a glass, add the Lime and Ginger Sorbet, pour the vodka over top of the sorbet to chill. Top with Soda water, stir and enjoy!
Silky Smooth Lime and Ginger Sorbet
Silky smooth, sweet and tart lime and ginger sorbet.
- 2 cups water
- 1/3 cup sugar
- 1 tbsp lime zest
- 1 1/3 cup light corn syrup
- 1 1/4 cup lime juice about 7 limes
- 1/2 cup grated ginger
In a medium saucepan, bring to a boil the water, sugar, corn syrup. Stir in the lime zest and ginger. Set aside and let steep for 20-30 minutes.
Juice about 7 large limes to make 1 1/4 cup of lime juice. Set aside.
Strain the ginger syrup through a fine sieve. Mix the lime juice with the syrup.
Turn on your ice cream maker and slowly stream in the lime and ginger mixture. Let the machine do it's thing for about 20 minutes. You'll notice the sorbet start to form.
Transfer the lime and ginger sorbet to an ice cream tub and refrigerate for a couple hours to help it firm up.
