How to Make Sex in a Pan

Okay, the name says it all.. Sex in a Pan. I had never heard of this dessert until a couple weeks ago when I attended a press dinner at Noce Restaurant, here in Toronto. It’s an Italian restaurant that’s been around for 20+ years and recently revamped their space and menu, and I must say, I’m in love! I’ve always walked by Noce because it’s located beside my favourite paper store (yes, stationary nerd over here). When I saw “Sex in a Pan” on the menu, I knew it HAD to be good.. and it definitely lived up to it’s name. This is the chef’s Italian version of the traditional Sex in a Pan! This dessert is pretty easy to make with 5 delicious and decadent layers.

If you know me, you know I’m a sucker for anything creamy and custardy.. and this is heaven on a plate! I actually forced myself to share the majority of this dessert for fear of eating it all. Yup, no self-control over here, haha. The five layers that make up this delicious dessert are:

My Grocery List:

  • Pecans (whole or ground)
  • Unsalted Butter
  • Mascarpone cheese
  • Heavy cream
  • Whole Milk
  • Instant Vanilla Pudding Mix
  • Chocolate Hazelnut Spread
  • Icing sugar

I start by baking the DELISH pecan crust, I could just eat this pecan crust on it’s own, it’s nutty, buttery.. don’t judge me. I mixed together ground pecans, flour, sugar, salt and some melted butter. It should come together pretty easily. Press that into the bottom of a 9 inch square pan (lined with parchment paper). Bake for until golden brown and then set aside to cool. Your kitchen will fill with the smell of brown butter, someone needs to make this scent into a candle!!

Next, make the vanilla pudding as per the box instructions.. it’s pretty straight forward, whisk the powder into whole milk and whisk until it thickens. Who doesn’t love vanilla pudding?!

Layering the.. cake? I don’t know if it’s actually considered a cake lol but layering this dessert is so easy, there’s no real science behind it but this was how the Chef at Noce layered it and why mess with a great thing?!

Start with your cooled pecan crust, spread an even layer of your whipped mascarpone, followed by a chocolate hazelnut spread or Nutella. I picked up this President’s Choice hazelnut spread (totally not sponsored) but I do love my President’s Choice products!! I made this Eggplant and Zucchini Crisp with PC Black Label products last month and you should totally make it this weekend!

Next up, our vanilla pudding, I added a touch of vanilla paste to add real vanilla flavour. Did you know there’s a shortage of vanilla in the world?! My heart hurts and I desperately need to stock up on it. Then, my homemade whipped cream and finished with some bittersweet chocolate shavings!! Now, the hardest part.. chilling the Sex in a Pan for 1-2 hours so that the layers chill out so that when you slice it, everything stays in tact.

Growing up, one of my favourite chocolate bars was Crunchie. I had never made homemade sponge toffee before, it always intimidated me but after making it for the first time, I can’t wait to make it again! I love how the sponge toffee adds a much needed crunch to the dessert. I promise you, it is worth making and worth the wait! Happy baking you guys!

Five delicious layers to create this delicious pan dessert. Pecan crust, mascarpone, nutella, vanilla pudding and homemade whipped cream.

Ingredients

Pecan Crust

  • 1 cup ground pecans
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • pinch salt
  • 1 stick butter melted

Whipped Mascarpone

  • 2/3 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup icing sugar
  • 1 tsp vanilla extract

Homemade Whipped Cream

  • 1/2 cup heavy cream
  • 1/4 cup icing sugar
  • 1 tsp vanilla extract or paste
  • pinch salt

Vanilla Pudding

  • 1 pkg Instant Vanilla Pudding
  • 2 cups whole milk
  • 2 tsp vanilla extract or paste

Chocolate Hazelnut Layer

  • 1 jar chocolate hazelnut spread

Instructions

Pecan Crust

  1. Preheat oven to 325F. Line a 9 inch square baking pan with parchment paper.

  2. In a medium bowl, add the ground pecans, flour, sugar, salt and butter. Mix with a fork until everything comes together. Transfer to the baking pan and press firmly into the pan and into the corners.

  3. Bake for 10-15 minutes until lightly golden and you start smelling the crust.

  4. Remove from oven and set on a wire rack to cool.

Vanilla Pudding

  1. Make the instant vanilla pudding according to the box instructions. Whisk until the mixture thickens. Set aside in the fridge until you need it.

Whipped Mascarpone

  1. In the bowl of a stand mixer with the whisk attachment, whisk together the mascarpone cheese, heavy cream, icing sugar and vanilla. Whisk for 3-5 minutes until fluffy and creamy.

Homemade Whipped Cream

  1. Whisk the heavy cream and gradually add in the icing sugar and vanilla. Whisk until you have firm peaks.
