11 Jun HOW TO MAKE EASY CARAMEL POPCORN
The perfect treat for dad.
My dad is not the kind of man that enjoys shopping or gifts really but he does love food! So, if your dad is anything like mine, he will LOVE this sweet and crunchy caramel popcorn. I’ve also put together a Father’s Day gift guide I know my stepfather-in-law, father-in-law would love and hopefully yours will too.
1 tbsp butter
1 tbsp canola oil
1/2 cup popcorn kernels
Pinch of salt
In a medium saucepan, on medium heat, add the butter and the oil. Heat until the butter bubbles and then add the kernels. Give it a stir to coat evenly and place the lid on the pot. Wait for the popcorn kernels to pop, give the pan a shake every 30 seconds so the bottom doesn’t burn. When you can hear the kernels slowing down, turn off the heat and pour the popcorn into a large bowl. Sprinkle with a pinch of salt.
1 cup + 2 tbsp granulated sugar
100 ml water
1 tbsp butter
Line a rimmed cookie sheet with parchment paper.
In a medium saucepan add the sugar and the water. Turn on the element to about medium and let the mixture bubble until it turns a golden amber colour. Every now and then give the saucepan a swirl but don’t stir the mixture. When it reaches the golden amber colour (about 10 minutes), add the butter. The caramel will bubble up, make sure you stir vigorously to incorporate everything. Once the bubbles calm down pour the caramel over the popcorn and stir (careful not to get any on your skin, it will burn!) With the rubber spatula, toss the popcorn so its evenly coated and dump it on the prepared sheet to cool completely.
When the caramel has completely cool, with your hands break them apart.
I added coconut flakes and drizzled the caramel popcorn with white colour for extra crunch. You can also add nuts and chocolate if you want. I add the coconut flakes in with the popcorn before adding the caramel so everything sticks together but you can always add it in after.
