26 Mar HOW TO MAKE: HOMEMADE GRANOLA
I made this granola recently and when my husband, Taylor, genuinely expressed that it was the best granola he’d ever eaten… I almost cried. I don’t make granola that often and I don’t really have a good reason why I don’t. It’s super easy to throw together, you can literally add whatever your heart desires and its SO good sprinkled on yogurt, smoothie bowls or eaten by itself. I love mine with lots of dried fruits, nuts and of course COCONUT. Is coconut a nut?
Theres actually this on-going joke with my friends that I’m trying to kill my friend Isabelle, who is allergic to coconut, because I literally put it in everything! I promise I’m not, haha.
The sweetness from the dried fruits and dates add the perfect amount of sugary goodness you’d want in a granola. Feel free to play around with different nuts and fruits depending on what you’d like!
4 cups large flaked oats
1/4 cup large flaked coconut
1/2 cup roughy chopped nuts (1/4 each almonds and pecans)
1/2 cup coconut oil, melted
1/4 cup honey (or 1/8 cup agave nectar to make it vegan)
1/4 cup brown sugar
1 tsp vanilla
2 tsp ground cinnamon
1/4 tsp salt
1 cup dried fruit (1/4 each of strawberries, apricots, pineapple, raisins)
1/4 cup chopped dates
Preheat oven to 325°F. Line a baking sheet with parchment paper.
In a large bowl, combine oats, coconut and nuts. In another bowl mix together the coconut oil, honey, brown sugar, vanilla, cinnamon and salt. Pour the wet ingredients into the oats mixture and mix until the oats and nuts are evenly coated.
Bake for 30-35 minutes until golden brown, stirring the mixture every 10 minutes to prevent burning at the edges.
Remove from the oven, toss in the dried fruit and dates and allow the granola to cool completely. Transfer to an airtight container and enjoy on yogurt, or my favourite, smoothie bowls!
