30 Minute Cinnamon Bun Muffins

New year, new delicious, easy recipes! I’ve been baking all through the holidays and eaten my fair share of cake, cookies, candy.. you name it, I ate it! Now that it’s a new year, I know everyone is trying to reset, make resolutions to make better food choices and eat healthier. Every year, I tell myself, this will be the year that I eat healthy, cut out sugar, start working out.. but this year is different.

This year, my goal is to learn to love myself for me. I love to bake and even more, I love to eat. Instead of cutting out all the things, this year I’ve decided to make better choices, cook and bake with real food and make a conscious effort to eat better ..when I can. So I’m sharing my 30 minute cinnamon bun muffins made with Joyya Ultrafiltered Milk from 100% Canadian cows.

Nothing fills me with more joy than when my home smells of baked goods! Cinnamon is one of my favourite spices to bake with, especially during the Winter because of its warm and spicy notes! I always love a soft and fluffy cinnamon bun but never have the time to make it. I wanted to make something with the flavours of a cinnamon bun without all the mess and sugary fillings.

These 30 minute Cinnamon Bun Muffins are high in protein, fibre and low in sugar (minus the streusel and glaze). I used Joyya Ultrafiltered Milk in the batter as well as sweetened them with date puree, both add moisture to the muffins.

Here’s your grocery list:

  • Joyya Ultrafiltered Milk – 2% Partly Skimmed
  • Medjool dates
  • Flour
  • Butter
  • Eggs
  • Cream cheese
  • Cinnamon

I decided not to use any sugar in the muffin itself (except for the streusel and glaze) so that the muffin is not super sweet. The addition of the streusel topping adds the perfect crunchy sweetness the muffin needs and you can’t have cinnamon buns without cream cheese frosting! In this case, I made a glaze, again so it’s not too sugary but still, delicious!

The date puree is a great natural sweetener and super easy to make! Soak 1 cup of chopped dates and 1/2 teaspoon baking soda in 3/4 cup of boiling water for a 5-10 minutes and then puree until smooth.

30 Minute Cinnamon Bun Muffins

Easy, delicious cinnamon bun muffins. High is protein, fibre and low in sugar. The perfect breakfast treat!

Ingredients

Muffin

  • 2 cups flour
  • 1 tbsp baking powder
  • 1 tbsp cinnamon
  • 1 cup date puree
  • 3 tbsp butter melted
  • 1 egg
  • 1 cup Joyya 2% Ultrafiltered Milk
  • 1 tsp vanilla extract

Streusel Topping

  • 1/2 cup flour
  • 1/2 cup brown sugar
  • Pinch of salt
  • 2 tsp cinnamon
  • 3 tbsp butter melted

Cream Cheese Glaze

  • 3 ounces cream cheese room temp
  • 4 tbsp milk
  • 1 1/2 cup powdered sugar

Date Puree

  • 1 cup chopped dates
  • 3/4 cup hot water
  • 1/2 tsp baking soda

Instructions

  1. Preheat oven to 400F. Grease a muffin tin with melted butter, set aside.

  2. In a large bowl, whisk together the flour, baking powder, cinnamon and salt. In another bowl, whisk together the milk, egg, butter, date puree and vanilla extract. Create a well in the middle of the flour and pour the wet ingredients into the dry ingredients. Whisk together until the batter just comes together. Set aside.

Streusel Topping

  1. In a bowl, stir together the brown sugar, flour, cinnamon, salt and butter. The mixture should hold together like wet sand.

  2. Scoop about 1/2 cup of batter into each muffin tin, create a little dip in the centre, sprinkle some of the streusel into the centre and top with the rest of the batter. Top the streusel with as much or as little topping as you’d like.

  3. Bake in the oven for 20-22 minutes for large muffin tins, 12-15 for regular sized muffins. Muffins are ready when you insert a toothpick and it comes ou clean. Let cool on a wire rack.

Cream Cheese Glaze

  1. While the muffins are baking, in the bowl of a stand mixer or with a hand mixer, whip together the cream cheese and milk. Add the icing sugar and mix on low until most of the powder is incorporated. The glaze should be runny.

  2. Drizzle the glaze on the cinnamon bun muffins and enjoy!
