I’m leaving for LA with my girlfriend Joelle tomorrow and I’m so excited for all the pink places we’re about to discover and all the food we are going to consume. This will be my first time in LA, I’ve heard so many great things about the city, especially from Joelle, so to say that I am excited is an understatement. I know I haven’t posted a recipe post in a while, January was pretty dreary and February passed by in the blink of an eye. I’m also hoping to get back into doing weekly videos once I come back from LA, but I am not the most organized person, so please be patient with me lol! I made these Chocolate Zucchini brownies for the first time early January after my Whole30.. well Whole7 lol, you can read why I decided to quit here. AND for good reason! But I wanted to share this delicious recipe with you because not only is it super easy to make, they are so delicious and I promise you can’t taste the zucchini in it either.

I have a confession, I never knew how to spell zucchini until this blog post. My whole life I’ve been spelling it zuchinni. You probably don’t care and didn’t even need to know this but I learned to spell! What would we do without spell check?!

These Chocolate Zucchini brownies are chocolatey, moist and more cake-y than a traditional brownie. I do love a rich and dense brownie but I love that these chocolate zucchini brownies are lighter. Which means I can have TWO without feeling super guilty afterwards haha.

I finished these brownies off with a super simple cream cheese frosting. You could also top it off with plain vanilla frosting, chocolate ganache or caramel would be delicious also! I just love the tanginess of cream cheese frosting. I hope you enjoy this recipe as much as I enjoyed making it and eating them, let me know if you try it and send me a photo if you do!

Chocolate Zucchini Brownies

These chocolate zucchini brownies are super easy to make, they are chocolatey, moist and cake-y. Topped with a delicious cream cheese frosting.

Cook Time 30 minutes
Total Time 40 minutes

Ingredients

Brownie

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup apple sauce
  • 1 tsp vanilla extract
  • 2 cups zucchini grated
  • 1 cup chocolate chunks/chips dark or semi-sweet

Cream Cheese Icing

  • 1/3 cup cream cheese room temp
  • 1/4 cup butter room temp
  • 1 cup icing sugar
  • 1 tsp vanilla extract
  • pinch salt

Instructions

  1. Preheat oven to 350*F. Line a 8x8 square pan with parchment paper.

  2. Using a grater, grate the zucchini. For 2 cups, you'll just need one large zucchini.

  3. In a large bowl, sift together the flour, cocoa powder, baking soda and salt.

  4. In medium bowl, whisk together the eggs, sugar, apple sauce and vanilla.

  5. Add the wet ingredients into the dry ingredients and whisk them together until just combined. Stir in the grated zucchini and the chocolate chunks.

  6. Transfer the mixture to the square pan, smooth out the top. Bake in the oven for 30-33 minutes, test the doneness of the brownies with a toothpick. I like my brownies a little more on the gooey side so I like to take them out when the toothpick is almost clean.

  7. Cool of a wire rack for 10 minutes. Then take it out of the pan and cool completely before icing.

For the Icing

  1. Whisk together the cream cheese and butter until light and fluffy. Sift in the icing sugar and vanilla. Whisk on high for 2-3 minutes until light and fluffy.
